Comforting and creamy white chicken enchiladas filled with shredded chicken and a rich cheese sauce, perfect for family dinners or entertaining guests.

Ingredients

  • 2 cups shredded cooked chicken
  • 1 cup cream cheese, softened
  • 1 cup shredded cheddar cheese
  • 1 cup sour cream
  • 1 cup enchilada sauce
  • 8 flour tortillas
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 tablespoon olive oil
  • Salt and pepper to taste

Instructions

  1. Combine the shredded chicken, cream cheese, half of the cheddar cheese, sour cream, garlic powder, onion powder, salt, and pepper in a bowl.
  2. Spread a thin layer of enchilada sauce on the bottom of a baking dish.
  3. Fill a tortilla with the chicken mixture, roll it up, and place it seam-side down in the baking dish.
  4. Repeat with the remaining tortillas and chicken mixture.
  5. Pour the remaining enchilada sauce over the rolled tortillas and sprinkle with the remaining cheddar cheese.
  6. Bake for 20-25 minutes or until the cheese is bubbly and slightly browned.
  7. Let cool for a few minutes before serving.

Notes

For a twist, substitute chicken with shredded beef or beans for a vegetarian option. Consider adding jalapeños or chili powder for extra spice.
