A flavor-packed Vietnamese dish featuring marinated chicken thighs infused with fragrant lemongrass and spices.

  • 1.5 lbs boneless, skinless chicken thighs
  • 3 stalks fresh lemongrass, trimmed and finely minced
  • 3 cloves garlic, minced
  • 2 tbsp fish sauce (or soy sauce)
  • 2 tbsp oyster sauce
  • 1 tbsp light soy sauce
  • 1 tbsp brown sugar
  • 1 tsp ground black pepper
  • 2 tbsp vegetable oil
  • Sliced red chili (to taste)
  • Fresh cilantro (to taste)
  • Lime wedges (for serving)

Instructions

  1. Combine the minced lemongrass, garlic, fish sauce, oyster sauce, light soy sauce, brown sugar, and black pepper in a bowl to create a marinade.
  2. Add the chicken pieces, ensuring they’re thoroughly coated, and let marinate for at least 30 minutes.
  3. Heat vegetable oil in a large skillet or wok over medium-high heat.
  4. Once the oil shimmers, add the marinated chicken and stir-fry for about 6-8 minutes until cooked through and golden brown.
  5. Toss in sliced red chili for a spicy kick, adjusting to taste.
  6. Remove from heat and garnish with fresh cilantro before serving.
  7. Serve hot with lime wedges on the side.

Notes

Mincing the lemongrass and garlic finely can enhance the flavor. Monitor cooking time to prevent drying out the chicken.
