  • 2 teaspoons garlic powder
  • 2 teaspoons ground cumin
  • 2 teaspoons paprika
  • 2 teaspoons onion powder
  • 1 teaspoon ground black pepper
  • 4 pounds chicken wings and/or drumettes
  • 2 egg whites, beaten until frothy
  • ½ cup hot wing sauce

Instructions

  1. Preheat your oven to 425°F and line a large rimmed baking sheet with aluminum foil. Place a metal cooling rack atop the foil and spray it with non-stick spray.
  2. Pat the chicken wings dry with paper towels.
  3. In a large bowl, mix kosher salt, garlic powder, cumin, paprika, onion powder, and black pepper.
  4. Add the chicken wings to the seasoning mixture and toss to coat.
  5. Beat the egg whites until frothy, then pour them over the seasoned wings and mix with tongs.
  6. Place the wings skin-side up on the prepared baking sheet with the wire rack.
  7. Bake for 45-60 minutes, until golden brown and internal temperature reaches 165°F.
  8. Transfer cooked wings to a bowl and toss in hot wing sauce until evenly coated.
  9. Serve hot with ranch or blue cheese dressing, along with celery and carrot sticks.

Notes

For the crispiest wings, ensure they are thoroughly dried before seasoning. Marinate wings in the seasoning for at least 30 minutes or overnight for enhanced flavor.
