Tasty White Rotisserie Chicken Enchiladas

Delight in layers of creamy, flavorful fillings wrapped in tortillas, topped with cheese and baked to perfection. Perfect for family meals and gatherings.

Ingredients

  • 2 cups rotisserie chicken, shredded
  • 1 cup cream cheese, softened
  • 1 cup sour cream
  • 1 cup shredded cheese (cheddar or Monterey Jack)
  • 1 can (10 oz) cream of chicken soup
  • 1 cup green enchilada sauce
  • 810 flour tortillas
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Combine the shredded rotisserie chicken, cream cheese, sour cream, half of the shredded cheese, cream of chicken soup, garlic powder, onion powder, salt, and pepper in a mixing bowl. Mix until well combined.
  3. Spread a small amount of green enchilada sauce in the bottom of a baking dish.
  4. Fill a tortilla with the chicken mixture, roll it up, and place it seam-side down in the baking dish. Repeat with remaining tortillas and filling.
  5. Pour the remaining enchilada sauce over the top and sprinkle with the rest of the cheese.
  6. Bake for 20-25 minutes or until the cheese is melted and bubbly.
  7. Serve warm and enjoy your delicious enchiladas!

Notes

Warming the tortillas slightly before rolling them makes them more pliable. Feel free to mix different cheeses or add spicy peppers for a kick.
