Quick and flavorful bowls featuring shredded rotisserie chicken, sweet chili sauce, and fresh vegetables over rice.

Ingredients

  • 1 rotisserie chicken, shredded
  • 1/2 cup sweet chili sauce
  • 2 cups cooked rice
  • 1 cup mixed vegetables (bell peppers, carrots, broccoli)
  • 1 tablespoon olive oil
  • Salt and pepper to taste
  • Green onions for garnish (optional)

Instructions

  1. Combine the shredded rotisserie chicken with the sweet chili sauce in a large bowl. Mix well to coat the chicken evenly.
  2. Heat the olive oil in a skillet over medium heat. Add the mixed vegetables and sauté until tender-crisp. Season with salt and pepper to taste.
  3. Assemble the bowls by placing a serving of cooked rice at the bottom. Top with the sweet chili chicken and sautéed vegetables.
  4. Garnish with chopped green onions if desired. Serve immediately and enjoy your meal!
