Ingredients

Scale
  • 1 lb chicken breast, cut into bite-sized pieces
  • 1 cup cornstarch
  • 2 eggs, beaten
  • 1 cup vegetable oil (for frying)
  • 1 bell pepper, chopped
  • 1 onion, chopped
  • 1 cup sweet and sour sauce
  • Salt and pepper to taste

Instructions

  1. Heat oil in a large pan over medium heat.
  2. Dredge chicken pieces in cornstarch, then dip in beaten eggs.
  3. Fry the chicken in hot oil until golden brown and cooked through, about 5-7 minutes.
  4. Remove the chicken and set aside.
  5. In the same pan, sauté bell pepper and onion until tender.
  6. Add sweet and sour sauce and bring to a simmer.
  7. Return the chicken to the pan, coating it in the sauce.
  8. Serve hot with rice or noodles.

Notes

For optimum results, fry the chicken in small batches to maintain oil temperature. Allow vegetables to soften and caramelize before adding sauce for enhanced flavor.
