A vibrant and flavorful dish featuring tender chicken, bell peppers, and pineapple in a delicious sweet and sour sauce.

  • 1 lb chicken breasts, cut into bite-sized pieces
  • 1/2 cup cornstarch
  • 2 eggs, beaten
  • Vegetable oil for frying
  • 1 cup bell peppers, diced
  • 1 cup pineapple chunks
  • 1/2 cup sweet and sour sauce
  • Salt and pepper to taste

Instructions

  1. Begin by seasoning the chicken pieces with salt and pepper.
  2. Dredge each piece of chicken in cornstarch.
  3. Dip the coated chicken into the beaten eggs.
  4. Heat vegetable oil in a frying pan over medium-high heat.
  5. Carefully place the chicken pieces in the pan, frying until golden brown, about 5-7 minutes.
  6. Remove the chicken from the pan and drain on paper towels.
  7. Stir-fry the diced bell peppers and pineapple chunks for about 2-3 minutes.
  8. Add the fried chicken back to the pan and pour in the sweet and sour sauce.
  9. Continue cooking for an additional 2-3 minutes until heated through.
  10. Serve hot over rice or noodles.

Notes

For extra flavor, consider marinating the chicken in soy sauce and garlic for 30 minutes before cooking.
