A comforting and exciting dish combining tender chicken, bell peppers, pineapple, and a rich, tangy sauce.

Ingredients

  • 1 pound chicken breast, cut into chunks
  • 1 cup bell peppers, chopped
  • 1 onion, chopped
  • 1 cup pineapple chunks
  • 1/2 cup ketchup
  • 1/4 cup vinegar
  • 1/4 cup sugar
  • 1/4 cup soy sauce
  • 1 tablespoon cornstarch
  • 1 tablespoon vegetable oil
  • Salt and pepper to taste

Instructions

  1. Mix ketchup, vinegar, sugar, soy sauce, and cornstarch to make the sauce.
  2. Heat vegetable oil in a pan over medium heat.
  3. Add the chicken chunks, season with salt and pepper, and cook until browned and cooked through.
  4. Add the bell peppers, onion, and pineapple to the pan, stir-fry for a few minutes.
  5. Pour the sauce over the chicken and vegetables, cooking until the sauce thickens.
  6. Serve hot over rice.
