A refreshing chicken salad combining tender chicken, sweet strawberries, and crunchy pecans, dressed in a creamy mix of mayonnaise and Greek yogurt.

Ingredients

  • 2 cups shredded chicken
  • 2 celery stalks, chopped into 1/4 inch pieces
  • 1 green onion, chopped thin
  • 56 large strawberries, diced
  • ⅓ cup chopped pecans
  • ¼ cup mayonnaise
  • 2 tablespoons plain Greek yogurt
  • 1 teaspoon Dijon mustard
  • 1 teaspoon lemon juice
  • 1 tablespoon poppy seeds
  • ½ teaspoon pepper
  • Salt to taste

Instructions

  1. Cut and chop all ingredients as specified.
  2. In a mixing bowl, add all ingredients except for the strawberries.
  3. Stir to combine and ensure everything is evenly coated.
  4. Adjust the consistency by adding more mayo or yogurt if desired.
  5. Fold in strawberries gently or wait to add them until just before serving if preparing in advance.
  6. Serve immediately or chill for about 10-20 minutes before serving to enhance the flavors.

Notes

For a vegan option, substitute chicken with chickpeas or tofu and use a plant-based mayonnaise.
