Delicious and comforting sour cream chicken enchiladas, perfect for family gatherings.

Ingredients

  • 2 cups cooked chicken, shredded
  • 1 cup sour cream
  • 1 cup shredded cheese
  • 1 can (10 oz) enchilada sauce
  • 8 flour tortillas
  • 1/2 cup chopped onion
  • 1 teaspoon garlic powder
  • Salt and pepper to taste
  • Chopped cilantro for garnish (optional)

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. Combine shredded chicken, sour cream, half of the cheese, onion, garlic powder, salt, and pepper in a bowl.
  3. Spread a small amount of enchilada sauce in the bottom of a baking dish.
  4. Fill each tortilla with the chicken mixture, roll it up, and place it seam-side down in the dish.
  5. Pour the remaining enchilada sauce over the rolled tortillas and sprinkle with the remaining cheese.
  6. Bake for 25-30 minutes until heated through and cheese is bubbly.
  7. Garnish with chopped cilantro if desired before serving.

Ensure your tortillas are warm and pliable for easier rolling. Save some enchilada sauce for drizzling before serving.
