Slow Cooker Chicken Gnocchi Soup

A warm, flavorful soup made with tender chicken, gnocchi, and a rich, creamy broth. Perfect for chilly days and served in a cozy bowl.

Ingredients

  • 4 boneless, skinless chicken breasts (about 11.5 lb.)
  • 1/2 yellow onion, diced
  • 4 cloves garlic, minced
  • 1 celery stalk, diced
  • 1/2 cup carrots, shredded
  • 5 cups chicken broth
  • 1 teaspoon dried basil
  • 1 teaspoon Italian seasoning
  • 1/4 teaspoon ground nutmeg
  • 1 bay leaf
  • Salt and pepper, to taste
  • 1 cup heavy cream
  • 1 (16 oz.) package potato gnocchi
  • 3 oz. fresh baby spinach, tightly packed (about 3 cups)

Instructions

  1. Place the chicken in your slow cooker.
  2. Top it with diced onion, minced garlic, diced celery, and shredded carrots.
  3. Season your ingredients with dried basil, Italian seasoning, ground nutmeg, salt, and pepper.
  4. Pour the chicken broth over everything.
  5. Set your slow cooker to high for 3-4 hours or low for 6-8 hours.
  6. Remove the chicken, shred or chop it, and discard the bay leaf.
  7. Add the chicken back into the slow cooker and pour in the heavy cream.
  8. Toss in the gnocchi and cook on high for 30-45 minutes.
  9. Add fresh baby spinach and let it wilt before serving.

Notes

For firmer gnocchi, cook separately and add just before serving. Add more broth or cream if soup thickens too much after refrigeration.
