A delicious slow cooker butter chicken recipe featuring tender chicken infused with spices and a creamy coconut sauce, perfect for a comforting meal.

  • 1.5 lbs boneless, skinless chicken thighs
  • 1 cup finely chopped onion
  • 4 cloves garlic, minced
  • 1-inch piece of ginger, grated
  • 1 can (14 oz) crushed tomatoes
  • 1 cup coconut milk
  • 3 tablespoons butter
  • 2 tablespoons garam masala
  • 1 teaspoon turmeric
  • 1 teaspoon cumin
  • 1 teaspoon paprika
  • Salt to taste
  • Fresh cilantro for garnish

Instructions

  1. Add the chicken thighs to your slow cooker.
  2. Follow with the chopped onion, minced garlic, and grated ginger.
  3. Stir in the crushed tomatoes and coconut milk.
  4. Add the butter and all the spices: garam masala, turmeric, cumin, paprika, and salt to taste.
  5. Cover and cook on low for 360 minutes (6 hours) or on high for 240 minutes (4 hours) until the chicken becomes tender.
  6. Once cooked, shred the chicken using two forks and stir everything well to combine.
  7. Serve hot, beautifully garnished with fresh cilantro, alongside rice or naan for a complete meal.

Notes

For extra flavor, sear the chicken before adding it to the slow cooker. You can also add vegetables during the last hour of cooking.
