1 small rotisserie chicken, pulled and shredded
3 medium-sized zucchinis, diced
1 (6oz) box of Stove Top chicken stuffing mix
1/2 cup butter, melted
1 (10oz) can of cream of chicken soup
1/2 cup sour cream
Instructions
Preheat your oven to 350° F and grease a 9×13 baking dish.
Melt the butter in a large bowl.
Mix the melted butter with the box of dry stuffing mix, setting aside half of this mixture for topping your casserole.
Add the pulled chicken, diced zucchini, cream of chicken soup, and sour cream to the bowl. Mix well until creamy.
Spread the mixture into the greased baking dish.
Evenly sprinkle the top with the reserved stuffing mixture.
Bake uncovered in the middle rack for 35-45 minutes or until warmed through and the top is golden brown.
Let cool slightly before serving.
Notes
