A comforting and satisfying pasta dish featuring rotisserie chicken, fresh vegetables, and a creamy sauce.

Ingredients

  • 2 cups rotisserie chicken, shredded
  • 8 oz pasta (farfalle or your choice)
  • 2 tablespoons olive oil
  • 3 cloves garlic, minced
  • 1 cup heavy cream
  • 1 cup chicken broth
  • 1 cup cherry tomatoes, halved
  • 1 cup fresh spinach
  • 1/2 cup grated Parmesan cheese
  • Salt and pepper to taste
  • Fresh basil for garnish

Instructions

  1. Boil the pasta according to package instructions. Drain and set aside.
  2. Heat olive oil in a large skillet over medium heat. Add garlic and sauté for about 30 seconds until fragrant.
  3. Pour in the heavy cream and chicken broth, bringing the mixture to a simmer. Add cherry tomatoes and spinach, cooking until the spinach wilts.
  4. Stir in the shredded rotisserie chicken and Parmesan cheese, mixing until the cheese melts into a creamy sauce.
  5. Add the cooked pasta to the skillet, tossing to coat everything evenly. Season with salt and pepper to taste.
  6. Garnish with fresh basil and additional Parmesan cheese, if desired.

Notes

For a touch of spice, consider adding crushed red pepper flakes.
