  • 1 tablespoon olive oil (for searing)

Instructions

  1. Combine feta cheese, chopped spinach, sun-dried tomatoes, minced garlic, and red pepper flakes in a bowl.
  2. Pound the chicken breasts to an even thickness for consistent cooking.
  3. Season the chicken on both sides with salt, black pepper, garlic powder, dried oregano, and smoked paprika.
  4. Spread the filling evenly over each chicken breast.
  5. Roll each chicken breast from one end to the other, securing the filling inside.
  6. Heat 2 tablespoons of olive oil in a skillet over medium-high heat. Sear the chicken rolls, turning occasionally until browned on all sides.
  7. Transfer the seared chicken to a baking dish and bake in the oven until fully cooked, about 20-25 minutes.

Notes
