Delicious roasted chicken thighs glazed with a savory-sweet miso sauce, perfect for impressing guests or enjoying a cozy family dinner.

  • 2 tablespoons brown sugar
  • 2 teaspoons rice vinegar
  • 2 tablespoons softened butter
  • ¼ teaspoon red pepper flakes
  • ¼ teaspoon ground ginger (or 1 teaspoon freshly grated)
  • ¼ teaspoon black pepper
  • 1 ½ lbs boneless skinless chicken thighs
  • Green onions, for serving (optional)

Instructions

  1. Preheat your oven to 425°F. Line a large, rimmed baking sheet with parchment paper or foil.
  2. Pat the chicken thighs dry and trim away any excess fat.
  3. Mix together the white miso paste, brown sugar, rice vinegar, softened butter, and spices in a small bowl.
  4. Spread the chicken thighs on the baking sheet, and coat each thigh with the miso mixture.
  5. Bake for 25 minutes or until the miso caramelizes and darkens.
  6. Check for an internal temperature of 165°F to ensure doneness.
  7. Let the chicken rest for a few minutes before serving, sprinkling with chopped green onions if desired.

Notes

Consider marinating the chicken for an hour in the miso mixture for enhanced flavor. Garlic can also be added for extra depth.
