A quick and easy homemade butter chicken that offers rich, creamy flavor and impressive simplicity, perfect for weeknight dinners.

  • 1 ½ pounds skinless boneless chicken thighs
  • 3 tablespoons vegetable oil
  • 3 tablespoons butter
  • 6 garlic cloves (minced)
  • 1 medium onion (diced)
  • 1 can (15 ounces) tomato sauce
  • 2 cups heavy cream
  • 1 teaspoon salt
  • 1 teaspoon garlic powder
  • 1 teaspoon sweet paprika
  • ½ teaspoon curry powder
  • 1 tablespoon Greek yogurt
  • 1 teaspoon sugar
  • ½ teaspoon black pepper
  • ½ teaspoon cayenne pepper (optional for heat)
  • 1 teaspoon garam masala

Instructions

  1. Marinate the chicken with salt, garlic powder, paprika, curry powder, and Greek yogurt for at least 15 minutes.
  2. In a large skillet over medium heat, cook the marinated chicken in oil and butter until browned. Remove and set aside.
  3. Sauté minced garlic and diced onion in the remaining butter until fragrant.
  4. Add tomato sauce, sugar, salt, black pepper, and cayenne; simmer for 5 minutes.
  5. Stir in heavy cream, garam masala, and curry powder; simmer gently for 5 minutes.
  6. Return the chicken to the skillet; let it cook in the sauce for another 5–10 minutes.
  7. Serve hot garnished with parsley alongside naan or rice.

Notes

For optimal flavor, marinate the chicken longer if possible. Adjust the cayenne pepper based on your spice tolerance.
