A simple yet delicious quick chicken stir fry packed with fresh vegetables and bold flavors, perfect for busy weeknights.

Ingredients

  • 1 lb boneless, skinless chicken breasts, sliced into strips
  • 1 cup bell peppers (mixed colors, sliced)
  • 1 cup broccoli florets
  • 1 medium carrot, thinly sliced
  • 1 tsp fresh ginger, minced
  • 3 tbsp low-sodium soy sauce
  • 2 tsp sesame oil
  • 1 tbsp cornstarch mixed with 2 tbsp water
  • Salt and pepper to taste
  • 1 tbsp vegetable oil for cooking

Instructions

  1. Heat the vegetable oil in a large skillet over medium-high heat.
  2. Add the chicken strips and season with salt and pepper. Cook until the chicken turns a beautiful brown color, about 5 minutes.
  3. Toss in the sliced bell peppers, broccoli florets, thinly sliced carrots, and minced ginger. Stir-fry for an additional 3-4 minutes until the vegetables are tender-crisp.
  4. Combine the soy sauce, sesame oil, and cornstarch slurry in a small bowl. Pour this mixture over the stir fry and stir continuously until everything is well coated and heated through.
  5. Serve your quick chicken stir fry immediately on plates or in bowls.

Notes

For added flavor, consider marinating the chicken in the soy sauce, sesame oil, and ginger for 30 minutes before cooking.
