A quick and flavorful weeknight dinner featuring juicy chicken breasts smothered in basil pesto, topped with cherry tomatoes and gooey mozzarella cheese.

Ingredients

  • 2 boneless, skinless chicken breasts
  • 1 cup basil pesto
  • 1 cup cherry tomatoes, halved
  • 1 cup mozzarella cheese, shredded
  • Salt and pepper, to taste
  • Olive oil

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Drizzle olive oil over the chicken breasts and season with salt and pepper in a baking dish.
  3. Spread the basil pesto evenly over the chicken.
  4. Scatter the halved cherry tomatoes on top of the pesto.
  5. Sprinkle the shredded mozzarella cheese over the chicken and tomatoes.
  6. Bake for 25-30 minutes, or until the chicken is cooked through and the cheese is bubbly and golden.
  7. Serve warm and enjoy your easy and flavorful dinner!

Notes

For optimal results, check the internal temperature of the chicken with a meat thermometer (165°F or 74°C). Allow the dish to sit for a few minutes after baking for juicier chicken.
