Pastor chicken features marinated chicken thighs infused with achiote paste and pineapple juice, grilled to perfection for a vibrant and flavorful dish.

  • 4 boneless, skinless chicken thighs
  • 2 tablespoons achiote paste
  • 2 tablespoons pineapple juice
  • 1 tablespoon lime juice
  • 2 cloves garlic, minced
  • 1 teaspoon cumin
  • 1 teaspoon oregano
  • Salt and pepper to taste
  • Pineapple slices (for grilling)
  • Fresh cilantro (for garnish)
  • Corn tortillas (for serving)

Instructions

  1. Mix achiote paste, pineapple juice, lime juice, minced garlic, cumin, oregano, salt, and pepper in a bowl.
  2. Add chicken thighs to the marinade and let it sit for at least 30 minutes (or overnight in the refrigerator for more flavor).
  3. Grill the marinated chicken over medium heat for about 6-7 minutes per side, until cooked through.
  4. Grill pineapple slices alongside the chicken for a few minutes until charred.
  5. Once the chicken is done, let it rest and then slice it.
  6. Serve on warm corn tortillas, topped with grilled pineapple and fresh cilantro.

Notes

Allow chicken to rest after grilling for moisture retention. Experiment with the marinade for custom spice levels.
