A simple and juicy recipe for oven-baked chicken tenderloins that focuses on flavor without the need for breading.

Ingredients

  • 2 lb chicken tenders
  • 1/41/2 cup melted butter or olive oil (or a mix)
  • 34 + Tbsp chicken rub (homemade or store-bought)
  • 1 Tbsp sweet paprika
  • 1 Tbsp garlic powder
  • 2 tsp onion powder
  • 2 tsp Italian seasoning
  • 2 tsp sweetener (brown sugar or sugar-free golden monk fruit)
  • 1/2 tsp fine sea salt
  • 1/2 tsp freshly ground black pepper
  • 1/4 tsp cayenne pepper
  • Chopped fresh parsley for garnish
  • Your favorite dipping sauces (such as BBQ, ranch, ketchup, honey mustard, etc.)

Instructions

  1. Preheat the oven to 400°F and adjust the oven rack to the center position.
  2. Combine sweet paprika, garlic powder, onion powder, Italian seasoning, sweetener, sea salt, black pepper, and cayenne pepper in a small bowl to create the spice mixture.
  3. Melt butter in a shallow dish. Dredge or brush the chicken tenders with melted butter.
  4. Place the chicken on a baking sheet and sprinkle the spice mixture over both sides.
  5. Bake for 10-12 minutes or until golden brown and internal temperature reaches 160-162°F.
  6. Allow to rest for 5 minutes, then serve garnished with parsley and your choice of sauces.

Notes
