One Pot Garlic Parmesan Chicken Pasta

A creamy, savory one pot dish featuring garlic, chicken, and penne pasta that brings restaurant-quality flavors to your kitchen.

  • 1 lb boneless, skinless chicken breasts, diced
  • 2 tablespoons olive oil
  • 2 tablespoons butter (plus more if needed)
  • 4 cloves garlic, minced
  • 2 cups chicken broth
  • 1 1/2 cups heavy cream
  • 8 oz penne pasta (uncooked)
  • 1 cup freshly grated Parmesan cheese
  • 1 teaspoon Italian seasoning
  • Salt and pepper to taste
  • Chopped fresh parsley for garnish (optional)

Instructions

  1. Heat olive oil and 2 tablespoons of butter in a large pot over medium-high heat.
  2. Add the diced chicken and season it with salt, pepper, and Italian seasoning. Sear the chicken until golden brown and cooked through. Remove it from the pot and set aside.
  3. In the same pot, reduce the heat to medium. Add the minced garlic and sauté until fragrant, which should take about 1 minute.
  4. Pour in the chicken broth and heavy cream, bringing the mixture to a light simmer.
  5. Stir in the uncooked penne pasta, cover the pot, and cook for 10-12 minutes, stirring occasionally to prevent sticking until the pasta is tender and most of the liquid is absorbed.
  6. Lower the heat and mix in the freshly grated Parmesan cheese. Stir until it melts and the sauce thickens.
  7. Finally, return the cooked chicken to the pot and combine everything, letting it warm through for a minute or two.
  8. If desired, garnish with chopped parsley and serve hot.

Notes

Make sure to stir the pasta occasionally during cooking to prevent sticking. Adjust the Parmesan cheese to personal taste for a creamier or lighter dish.
