A comforting and flavorful one-pan dish featuring orzo pasta, rotisserie chicken, fresh spinach, and sun-dried tomatoes, perfect for gatherings.

  • 16 oz dry orzo
  • 2 cups chicken stock (unsalted)
  • 2 cups heavy cream
  • 4 cups loosely packed baby spinach leaves, torn (or 8 oz frozen box spinach thawed and drained)
  • 0.5 oz container fresh basil leaves (stems removed)
  • 1 (8 oz) jar sun-dried tomatoes (oil drained)
  • 2 cups rotisserie chicken (diced)
  • 5 cloves garlic (minced)
  • 1 tsp Italian seasoning
  • 1/2 tsp salt
  • 1/2 tsp pepper
  • 2/3 cup parmesan, grated or shredded (plus extra for topping)

Instructions

  1. Preheat your oven to 350 degrees F.
  2. Spray a 9×13 casserole dish with non-stick spray.
  3. Add dry orzo, chicken stock, and heavy cream into the prepared baking dish.
  4. Incorporate spinach, basil, diced chicken, minced garlic, and sun-dried tomatoes.
  5. Sprinkle with Italian seasoning, salt, and pepper.
  6. Mix until even distribution, ensuring spinach and basil combine with the liquid.
  7. Arrange mixture into a flat layer.
  8. If desired, sprinkle extra parmesan on top.
  9. Bake uncovered for about 35 minutes or until the orzo is tender.
  10. Let the dish rest for 10 minutes before mixing and serving hot.

Notes

For a creamier texture, increase the amount of heavy cream slightly. Pair with a crisp green salad or steamed vegetables.
