A delicious one-pan dish combining tender chicken, rich honey BBQ flavor, and long-grain rice, all cooked in one skillet.

  • 1 lb boneless, skinless chicken thighs or breasts
  • 1 cup long-grain rice
  • 2 cups chicken broth
  • ½ cup BBQ sauce
  • ¼ cup honey
  • 1 cup mixed vegetables (frozen or fresh)
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • ½ tsp smoked paprika
  • Salt and pepper to taste

Instructions

  1. Season the chicken thighs or breasts with garlic powder, onion powder, smoked paprika, salt, and pepper.
  2. In a large skillet over medium heat, sear the seasoned chicken for about 5 minutes on each side until browned.
  3. In a small bowl, whisk together the BBQ sauce and honey, then pour it over the chicken.
  4. Add the rice and chicken broth to the skillet, stirring to combine everything.
  5. Bring the mixture to a simmer; cover the skillet and cook on low for about 20 minutes until the rice is tender.
  6. During the last 5 minutes of cooking, add the mixed vegetables on top to steam.
  7. Let the dish sit for 5 minutes before fluffing the rice with a fork and serving.

Notes

For extra tenderness, marinate the chicken in BBQ sauce and honey for a few hours before cooking. Adjust cooking time based on chicken thickness for safety.
