One-Pan Bold Honey BBQ Chicken Rice

A flavorful and easy one-pan meal featuring succulent chicken, rice, and a delightful honey BBQ sauce.

Ingredients

  • 1 lb boneless, skinless chicken thighs or breasts
  • 1 cup long-grain rice
  • 2 cups chicken broth
  • ½ cup BBQ sauce
  • ¼ cup honey
  • 1 cup mixed vegetables (frozen or fresh)
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • ½ tsp smoked paprika
  • Salt and pepper to taste

Instructions

  1. In a large skillet over medium heat, season and sear the chicken for about 5 minutes on each side until browned.
  2. In a small bowl, whisk together BBQ sauce and honey; pour it over the chicken.
  3. Add rice and chicken broth; stir to combine.
  4. Bring to a simmer; cover and cook on low for about 20 minutes until rice is tender.
  5. During the last 5 minutes of cooking, add mixed vegetables on top to steam.
  6. Let sit for 5 minutes before fluffing rice with a fork and serving.

Notes

Serve with fresh parsley for garnish and pair with a side salad or steamed greens.
