A flavorful mustard chicken dish infused with Dijon mustard and honey, making it juicy and well-seasoned.

  • 4 boneless chicken breasts
  • 4 tablespoons Dijon mustard
  • 2 tablespoons honey
  • 2 tablespoons olive oil
  • 3 cloves garlic, minced
  • Juice of 1 lemon
  • Salt and pepper, to taste
  • 1 teaspoon fresh rosemary (optional)
  • 1 teaspoon fresh thyme (optional)

Instructions

  1. Preheat your oven to 200°C (400°F).
  2. In a mixing bowl, combine mustard, honey, olive oil, garlic, and lemon juice. Season with salt and pepper to taste.
  3. Place the chicken breasts in a large bowl and pour the marinade over them, ensuring they are evenly coated. Allow marination for at least 15 minutes, or longer if time permits.
  4. Grease a baking dish and lay the chicken breasts in it. Sprinkle rosemary and thyme for added flavor.
  5. Bake the chicken in the preheated oven for around 25-30 minutes or until fully cooked, with an internal temperature of 74°C (165°F).
  6. Remove from the oven and let it rest for about 5 minutes before slicing. Serve alongside the pan juices.

Notes

For best results, ensure chicken is at room temperature before marination. Baste halfway through cooking for moisture.
