A delicious and simple recipe for a moist and tender whole chicken cooked in a crockpot with aromatic herbs and vegetables.

  • 1 whole chicken (45 lbs)
  • 2 tbsp olive oil or butter
  • 1½ tsp salt
  • 1 tsp black pepper
  • 1½ tsp garlic powder
  • 1 tsp onion powder
  • 1 tsp dried thyme
  • 1 tsp dried rosemary
  • 1 tsp smoked paprika (optional)
  • 1 yellow onion, quartered
  • 4 garlic cloves, smashed
  • 2 carrots, chopped
  • 2 celery stalks
  • 1 lemon, halved
  • Fresh herb sprigs (optional)

Instructions

  1. Pat the chicken dry and rub it with olive oil or butter, ensuring every part is covered.
  2. Season the chicken with salt, black pepper, garlic powder, onion powder, dried thyme, dried rosemary, and smoked paprika if desired.
  3. Stuff the cavity of the chicken with the halved lemon and fresh herb sprigs for added flavor.
  4. In your crockpot, layer the quartered yellow onion, smashed garlic cloves, chopped carrots, and celery at the bottom.
  5. Place the seasoned chicken breast-side up on top of the vegetables.
  6. Cook on LOW for 420–480 minutes or on HIGH for 240–300 minutes.
  7. For crispy skin, optionally broil the chicken for 4–5 minutes after cooking.
  8. Allow it to rest before carving, and serve with the delicious pan juices.

Notes

For optimal results, consider marinating the chicken overnight after seasoning. Always check the internal temperature to ensure it’s at least 165°F.
