Ingredients

Scale
  • 2 lbs boneless, skinless chicken breasts
  • 1 cup chicken broth
  • 1 tablespoon olive oil
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 tablespoon chili powder
  • 1 teaspoon cumin
  • 1 teaspoon paprika
  • Salt and pepper to taste

Instructions

  1. Heat the olive oil over medium heat in a large skillet.
  2. Add the chopped onion and minced garlic, sautéing until the onion is translucent.
  3. Introduce the chicken breasts into the skillet.
  4. Pour in the chicken broth and sprinkle in the chili powder, cumin, and paprika.
  5. Bring the mixture to a boil, then reduce heat and cover.
  6. Allow it to simmer for 20-25 minutes until the chicken is cooked through.
  7. Remove the chicken and shred it using two forks.
  8. Return the shredded chicken to the skillet and mix well with the remaining juices.

Notes

Feel free to adjust the spices to match your taste; adding more chili powder gives it a kick, while reducing it makes it milder.
