A comforting and flavorful Mexican Chicken Casserole made with chicken, black beans, corn, tomatoes, and cheese, perfect for family gatherings.

Ingredients

  • 2 cups cooked chicken, shredded
  • 1 can black beans, drained and rinsed
  • 1 can corn, drained
  • 1 can diced tomatoes with green chilies
  • 1 cup salsa
  • 2 cups cooked rice
  • 1 cup shredded cheese (cheddar or Mexican blend)
  • 1 teaspoon chili powder
  • 1 teaspoon cumin
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. Combine shredded chicken, black beans, corn, diced tomatoes, salsa, cooked rice, chili powder, cumin, salt, and pepper in a large bowl. Mix well.
  3. Transfer the mixture to a greased 9×13 inch baking dish, spreading it evenly.
  4. Top with shredded cheese, allowing it to cover the dish generously.
  5. Bake in the preheated oven for about 20-25 minutes, or until the cheese is melted and bubbly.
  6. Let cool slightly before serving.
