A delicious and easy low-carb casserole featuring rotisserie chicken and fresh zucchinis, blended with creamy cheese and spices.

  • 2 cups rotisserie chicken, shredded
  • 2 medium zucchinis, sliced
  • 1 cup shredded cheese (cheddar or mozzarella)
  • 1 cup heavy cream
  • 1/2 cup diced onion
  • 2 cloves garlic, minced
  • 1 tsp Italian seasoning
  • Salt and pepper to taste
  • Olive oil for greasing

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Grease the casserole dish with olive oil to avoid sticking.
  3. Combine the shredded rotisserie chicken, sliced zucchinis, diced onion, minced garlic, Italian seasoning, heavy cream, salt, and pepper in a large bowl. Mix well until everything is evenly coated.
  4. Pour the mixture into the prepared casserole dish.
  5. Top with shredded cheese, covering the mixture generously.
  6. Bake for 25-30 minutes or until the cheese is bubbly and golden.
  7. Allow to cool slightly before serving.
