Deliciously marinated chicken skewers that blend sweet, savory, and spicy flavors, grilled to perfection.

Ingredients

Scale
  • 1 ½ lbs. boneless, skinless chicken thighs
  • 2 tsp fresh ginger (finely grated)
  • 2 tsp minced garlic
  • 3 tbsp low-sodium soy sauce
  • 3 tbsp brown sugar
  • 1 tsp sesame oil
  • 1 tbsp rice vinegar
  • 2 tbsp gochujang
  • Chopped green onions (optional garnish)

Instructions

  1. Cut the chicken into 1 ½-inch cubes and toss them in a bowl.
  2. Whisk together the ginger, garlic, soy sauce, brown sugar, sesame oil, rice vinegar, and gochujang to create the marinade.
  3. Pour half of the marinade over the chicken and mix until fully coated.
  4. Cover the bowl and place it in the fridge to marinate for at least 4 hours or up to overnight.
  5. Cover the remaining marinade and store it in the fridge to use later for basting the chicken.
  6. Once the chicken has marinated, thread the chicken onto skewers.
  7. Preheat your grill to medium heat.
  8. Lightly oil the grill and place the skewers on it.
  9. Grill the skewers for 20-30 minutes, turning them every 3-4 minutes until the chicken reaches an internal temperature of 165°F. Baste with the remaining sauce during the last few turns.
  10. Remove the skewers from the grill and serve, garnished with chopped green onions if desired.

Notes

Soak wooden skewers in water for at least 30 minutes before grilling to prevent burning.
