These juicy chicken sliders, made with shredded rotisserie chicken and gooey cheese, are a quick and satisfying meal perfect for busy weeknights.

  • 12 slider buns (Hawaiian rolls)
  • 2 cups shredded rotisserie chicken
  • 1/2 cup mayonnaise
  • 1 tablespoon Dijon mustard
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • Salt and pepper to taste
  • 6 slices provolone or mozzarella cheese
  • 2 tablespoons unsalted butter, melted
  • 1 tablespoon finely chopped parsley
  • 1/2 teaspoon poppy seeds (optional)

Instructions

  1. Preheat your oven to 350°F (175°C). Lightly grease or line a baking dish with parchment paper.
  2. Slice the slider buns horizontally to separate the tops from the bottoms and place the bottom halves in the baking dish.
  3. Combine the shredded rotisserie chicken with mayonnaise, Dijon mustard, garlic powder, onion powder, salt, and pepper in a bowl. Mix until well-coated.
  4. Spread the chicken mixture over the bottom halves of the buns evenly.
  5. Layer the cheese slices over the chicken mixture.
  6. Place the top halves of the buns over the cheese.
  7. Whisk together melted butter, parsley, and optional poppy seeds in a small bowl. Brush this mixture over the tops of the buns.
  8. Cover the dish with foil and bake for 10 minutes. Remove the foil and bake for another 5–7 minutes, until the tops are golden brown and cheese is melted.
  9. Serve warm.

Notes

Use pre-cooked rotisserie chicken to cut down on preparation time. Customize with different spices or toppings for added flavor.
