Delicious jerk chicken infused with smoky and spicy flavors, slow-cooked to perfection for a tender and hearty meal.

Ingredients

  • 2 pounds of chicken (thighs or breasts)
  • 2 tablespoons of jerk seasoning
  • 1 onion, sliced
  • 2 cloves of garlic, minced
  • 1 bell pepper, sliced
  • 1 cup of chicken broth
  • 1 tablespoon of olive oil
  • Salt and pepper to taste

Instructions

  1. Mix the chicken with jerk seasoning, minced garlic, salt, and pepper in a bowl.
  2. Heat olive oil in a skillet over medium heat and sauté the onions and bell peppers until soft.
  3. Transfer the sautéed vegetables to the crockpot.
  4. Place the seasoned chicken on top of the vegetables in the crockpot.
  5. Pour in the chicken broth.
  6. Cover and cook on low for 6-8 hours or on high for 3-4 hours.

Notes

Marinating the chicken in jerk seasoning beforehand can enhance the flavor. Serve hot with rice or quinoa.
