A vibrant and flavorful Jamaican fricassee chicken recipe that combines aromatic seasonings and a juicy whole chicken for a comforting meal.

  • 2 tablespoons all-purpose seasoning
  • 1 tablespoon jerk seasoning
  • 1 tablespoon poultry seasoning
  • 3 teaspoons dried thyme
  • 2 teaspoons garlic powder (optional)
  • 5 pounds whole chicken
  • ½ onion, sliced
  • 12 tablespoons olive oil
  • 1 tablespoon pimento
  • ½ to 1 teaspoon browning
  • 1 tablespoon ketchup

Instructions

  1. Place the chicken in a bowl, pat it dry with paper towels to ensure a crisp texture.
  2. Add the all-purpose seasoning, jerk seasoning, poultry seasoning, dried thyme, and garlic powder if using. Mix well to coat the chicken evenly.
  3. Allow the chicken to marinate for 15 to 30 minutes at room temperature or, for maximum flavor, place it in the fridge for up to 24 hours.
  4. Heat olive oil in a skillet over medium-high heat. Once hot, sear the chicken until golden, about 5 minutes per side.
  5. Remove the chicken and wipe the skillet if necessary. If the skillet looks too dry, add a little more olive oil.
  6. Return the chicken to the skillet, add the sliced onion, pimento, and browning. Cover and cook on medium-low for about 20 to 25 minutes, stirring occasionally.
  7. If the mixture begins to dry out, add just enough water to reach halfway up the chicken.
  8. In the last 5 minutes of cooking, add the ketchup and stir well to combine. Serve when ready, ensuring that every bite is juicy and flavorful.

Notes

For best flavor, marinate overnight in the fridge. Adjust spice levels according to your preference.
