A comforting blend of creamy white beans and rich pumpkin puree, perfect for chilly weather.

Ingredients

Scale
  • 2 cans of white beans, rinsed and drained
  • 1 can of pumpkin puree
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 1 bell pepper, diced
  • 1 can of diced tomatoes
  • 2 cups vegetable broth
  • 1 tablespoon chili powder
  • 1 teaspoon cumin
  • Salt and pepper to taste
  • Olive oil
  • Fresh cilantro for garnish

Instructions

  1. Start by heating olive oil in a large pot over medium heat.
  2. Add the diced onion and minced garlic. Sauté until the onion becomes translucent.
  3. Stir in the diced bell pepper and let it cook for about 3 minutes.
  4. Mix in the rinsed white beans, pumpkin puree, and diced tomatoes.
  5. Pour in the vegetable broth, then add the chili powder, cumin, salt, and pepper.
  6. Bring the mixture to a boil, then reduce the heat and let it simmer for 20 to 30 minutes.
  7. Taste and adjust the seasoning as needed.
  8. Serve hot, garnished with fresh cilantro.

Notes

Consider roasting the bell pepper beforehand for extra flavor. For a thicker chili, let it simmer longer or mash some beans against the pot.
