A comforting and nutritious crustless chicken pot pie loaded with tender chicken, hearty vegetables, and a creamy sauce.

Ingredients

  • 2 cups cooked chicken, shredded
  • 1 cup mixed vegetables (carrots, peas, corn)
  • 1 cup chicken broth
  • 1 cup milk
  • 1/2 cup diced onion
  • 2 cloves garlic, minced
  • 1 teaspoon dried thyme
  • Salt and pepper to taste
  • 2 tablespoons olive oil
  • 2 tablespoons all-purpose flour (optional for thickening)

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Heat olive oil over medium heat in a large skillet.
  3. Add the diced onion and garlic, cooking until fragrant.
  4. Stir in mixed vegetables and cook for another 2-3 minutes.
  5. Combine the shredded chicken, chicken broth, milk, thyme, salt, and pepper in a bowl. If desired, whisk flour into the mixture for a thicker sauce.
  6. Pour the chicken mixture into the skillet with the vegetables, mixing well.
  7. Transfer the mixture to a baking dish.
  8. Bake in the preheated oven for 25-30 minutes until golden and bubbly.
  9. Let cool slightly before serving.
