  • 800 g chicken breast (cut into halves)
  • 1.5 tsp Cajun seasoning mix
  • 2 tsp olive oil
  • 1 medium red onion (chopped)
  • 45 garlic cloves (chopped)
  • 25 g grass-fed butter for cooking
  • 1 tsp salt
  • 1 tsp black pepper
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1 tsp oregano
  • 1 tsp thyme
  • 1 tsp paprika
  • 1 tsp chili powder
  • 250 ml milk
  • 150 g light cream cheese
  • 40 g Parmesan cheese
  • Fresh parsley (for garnish)

Instructions

  1. Marinate the chicken pieces overnight with Cajun seasoning and olive oil. Store in an airtight glass container.
  2. Heat a pan over medium-high heat and melt the grass-fed butter. Cook the marinated chicken until golden, about 6-8 minutes on each side.
  3. Let the chicken rest, then slice into strips.
  4. Sauté chopped onion and garlic in the same pan until fragrant, about 2-3 minutes.
  5. Add remaining Cajun seasoning and day-old rice, stirring until well coated.
  6. Lower heat, whisk in milk, then mix in cream cheese and Parmesan until smooth.
  7. Plate Cajun rice, top with chicken, and drizzle with creamy sauce. Garnish with parsley.

Notes

Use a meat thermometer to ensure the chicken reaches 165°F for safety. Reusing the pan adds depth to the sauce.
