A satisfying bowl filled with smoky BBQ chicken, crunchy slaw, and nourishing rice, perfect for busy weeknights.

  • 2 cups Slow Cooker BBQ Chicken or cooked shredded chicken tossed with ⅓ cup BBQ sauce
  • 2 cups Purple Cabbage Slaw
  • 1 cup fresh or frozen-defrosted corn kernels
  • 1 cup canned black beans, drained and rinsed
  • 1 cup cooked rice
  • 2 green onions, thinly sliced
  • 1 avocado, sliced
  • 4 tablespoons Chipotle BBQ Sauce or any sauce of choice

Instructions

  1. Begin by preparing the chicken, adding it to the slow cooker with BBQ sauce.
  2. Cook for about six hours until easily shredded.
  3. Assemble the bowl with a layer of cooked rice in each serving bowl.
  4. Add black beans, followed by corn kernels and purple cabbage slaw.
  5. Top each bowl with the shredded BBQ chicken.
  6. Garnish with sliced green onions and avocado, and drizzle Chipotle BBQ sauce over the top.

Notes

For extra flavor, consider marinating the slaw in your favorite dressing. Use boneless, skinless chicken breasts for best results.
