A comforting casserole featuring shredded rotisserie chicken, savory stuffing, mixed vegetables, and a cheesy top that brings family together during mealtime.

  • 1 rotisserie chicken, shredded
  • 1 box of stuffing mix
  • 2 cups chicken broth
  • 1 cup celery, diced
  • 1 cup onion, diced
  • 1 cup mixed vegetables (peas, carrots, corn)
  • 2 cups shredded cheddar cheese
  • 1 tablespoon olive oil
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. Heat olive oil in a large skillet over medium heat.
  3. Add diced celery and onion, and sauté until softened.
  4. Combine shredded chicken, sautéed vegetables, stuffing mix, and chicken broth in a mixing bowl. Mix well.
  5. Transfer the mixture to a greased casserole dish.
  6. Top with mixed vegetables, spreading them evenly.
  7. Sprinkle shredded cheddar cheese over the top.
  8. Cover with foil and bake for 30 minutes.
  9. Remove foil and bake for an additional 10-15 minutes until cheese is bubbly and golden.
  10. Let cool for a few minutes before serving.

Notes

For more flavor, consider adding herbs like thyme or parsley before baking. Can be prepared a day in advance and refrigerated before baking.
