  • 2 tablespoons olive oil
  • 1 large onion, chopped
  • 3 cloves garlic, minced
  • 3 carrots, sliced
  • 3 medium potatoes, cubed
  • 1 cup frozen peas
  • 4 cups chicken broth
  • 1 cup water
  • 2 tablespoons tomato paste
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary
  • Salt and pepper, to taste
  • Fresh thyme or parsley (for garnish)

Instructions

  1. Heat olive oil in a large pot over medium heat. Add the chopped onion and sauté until softened, about 5 minutes.
  2. Add minced garlic and cook for another minute, until fragrant.
  3. Stir in the carrots, potatoes, chicken broth, and water. Mix in the tomato paste, dried thyme, rosemary, salt, and pepper. Bring to a boil, then reduce heat to low and simmer for 20 minutes, or until vegetables are tender.
  4. Add the shredded chicken and frozen peas. Stir to combine and let simmer for another 5-10 minutes, ensuring everything is heated through.
  5. Ladle into bowls and garnish with fresh thyme or parsley. Serve hot.
