A comforting casserole combining shredded chicken, fresh spinach, and artichoke hearts with creamy cheeses to create a nutritious and delicious main course.

  • 2 cooked skinless chicken breasts, shredded or cubed
  • 2 tablespoons avocado oil or melted grass-fed butter
  • 1/2 cup organic whole milk cottage cheese
  • 3/4 cup organic sour cream
  • 2 cups shredded mozzarella, preferably organic (divided)
  • 1/4 cup chopped fresh Italian parsley
  • 1 teaspoon mineral-rich salt
  • 1 1/2 teaspoons garlic granules or garlic powder
  • 1 teaspoon dried thyme
  • Juice and zest of 1/2 lemon
  • 2 cups fresh organic spinach
  • 18 oz drained artichoke hearts, halved

Instructions

  1. Preheat your oven to 375°F.
  2. Grease your casserole dish using your chosen healthy fat.
  3. In a large mixing bowl, combine the shredded chicken, healthy fat, cottage cheese, and sour cream.
  4. Mix well, then add 1 1/2 cups shredded mozzarella, parsley, salt, garlic, thyme, lemon juice, and zest. Stir until evenly distributed.
  5. Gently fold in the fresh spinach and artichoke hearts until combined.
  6. Pour the mixture into the greased casserole dish.
  7. Sprinkle the remaining 1/2 cup of shredded mozzarella cheese over the top.
  8. Bake in the oven for 40-50 minutes until the cheesy topping is lightly golden brown.
  9. Allow the casserole to cool for 10 minutes before serving.

Notes

For added flavor, consider adding grated Parmesan cheese or a pinch of crushed red pepper flakes to the mixture.
