  • 1 can black beans, drained and rinsed
  • 1 cup corn, frozen or canned
  • 1 cup cooked brown rice
  • 1 cup salsa
  • 1 cup shredded cheese (cheddar or Mexican blend)
  • 1 tsp cumin
  • 1 tsp chili powder
  • Salt and pepper to taste
  • Chopped cilantro for garnish (optional)

Instructions

  1. Combine shredded chicken, black beans, corn, cooked rice, salsa, cumin, chili powder, salt, and pepper into a large bowl.
  2. Mix the ingredients thoroughly.
  3. Transfer the mixture to your greased baking dish and spread it evenly.
  4. Sprinkle the shredded cheese on top.
  5. Cover the dish with foil and bake for 20-25 minutes.
