A comforting and nutritious chicken and rice casserole, perfect for busy weeknights or meal prep.

  • 1 pound chicken breast, cooked and shredded
  • 1 cup uncooked brown rice
  • 2 cups chicken broth
  • 1 cup mixed vegetables (like peas, carrots, and corn)
  • 1 cup Greek yogurt
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • Salt and pepper to taste
  • 1 cup shredded cheese (optional)
  • Fresh parsley for garnish (optional)

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. Mix the cooked chicken, brown rice, chicken broth, mixed vegetables, Greek yogurt, garlic powder, onion powder, salt, and pepper until well combined.
  3. Transfer the mixture to a greased casserole dish.
  4. If using, sprinkle shredded cheese on top.
  5. Cover with aluminum foil and bake for 30-35 minutes, or until rice is tender and the mixture is bubbling.
  6. Remove the foil and bake for an additional 10 minutes to brown the cheese.
  7. Let it cool slightly, garnish with parsley if desired, and serve warm.

Notes

Ensure chicken is adequately shredded for even distribution. Add herbs for extra flavor.
