A flavorful Hawaiian-Style BBQ Chicken recipe featuring juicy chicken thighs, homemade barbecue sauce, and grilled pineapple that transports you to sunny shores with every bite.

  • 2 pounds boneless, skinless chicken thighs
  • 1 1/2 teaspoons sea or Himalayan pink salt
  • 3/4 teaspoon black pepper
  • 1 small pineapple, peeled and cut into ½-inch rings
  • Green onions, for garnish (optional)
  • Sesame seeds, for garnish (optional)
  • 1 cup ketchup
  • 2 tablespoons apple cider vinegar
  • 2 tablespoons brown sugar
  • 2 tablespoons soy sauce
  • 1 tablespoon prepared yellow mustard
  • 1 teaspoon pure Madagascar vanilla extract
  • ½ teaspoon ginger
  • ½ teaspoon garlic powder
  • ½ teaspoon smoked paprika
  • ½ teaspoon onion powder
  • 1 pinch cayenne (optional)

Instructions

  1. Season the chicken thighs with salt and black pepper on both sides.
  2. Combine all the ingredients for the barbecue sauce in a medium bowl and whisk until smooth. Set aside.
  3. Place the chicken thighs on the grill over direct heat and sear for 3 to 4 minutes on each side.
  4. Move the chicken to indirect heat on the grill, brushing one side with barbecue sauce. Close the grill and cook for another 8 minutes.
  5. Flip the chicken, brush the other side with barbecue sauce, and continue cooking until the internal temperature reaches 165 degrees.
  6. Baste the chicken with additional barbecue sauce as it cooks or save any remaining sauce for serving.
  7. Place pineapple rings over direct heat and grill for 3 to 5 minutes on each side until lightly charred.
  8. Serve grilled chicken and pineapple, garnished with green onions or sesame seeds as desired.

Notes

For added flavor, marinate the chicken in barbecue sauce for at least an hour before grilling. Store any leftovers in airtight containers in the refrigerator for about 3-4 days.
