A vibrant stir fry combining chicken, bell pepper, and pineapple, infused with sweet and sour sauce for a quick and delightful meal.

Ingredients

  • 1 lb chicken breast, cut into bite-sized pieces
  • 1 red bell pepper, sliced
  • 1 cup pineapple chunks
  • 1/4 cup sweet and sour sauce
  • 2 tablespoons olive oil
  • Salt and pepper to taste
  • Cooked rice for serving

Instructions

  1. Heat olive oil in a large skillet over medium-high heat.
  2. Add the chicken pieces and cook until lightly browned and cooked through, about 5-7 minutes.
  3. Add the sliced red bell pepper and pineapple chunks to the skillet, stirring to combine.
  4. Pour the sweet and sour sauce over the mixture and stir well to coat.
  5. Cook for an additional 3-5 minutes until the bell pepper is tender.
