A delightful tropical dish combining grilled chicken, caramelized pineapple, and creamy coconut rice.

Ingredients

  • 2 Chicken breasts
  • 1 can Pineapple slices
  • 1 cup Coconut milk
  • 1 cup Rice
  • 3 tbsp Soy sauce
  • 2 cloves Garlic, minced
  • 1 tsp Salt
  • 1/2 tsp Pepper
  • 2 tbsp Olive oil

Instructions

  1. Marinate the chicken breasts in soy sauce, minced garlic, salt, and pepper for at least 30 minutes.
  2. Grill or pan-fry the chicken until cooked through.
  3. Combine rice and coconut milk in a pot, and cook according to rice package instructions.
  4. Grill pineapple slices until caramelized.
  5. Serve the chicken with coconut rice and grilled pineapple on the side.

Notes

For maximum flavor, let the chicken marinate longer if possible. Adjust rice texture to preference.
