A hearty and nutritious ground chicken taco casserole that combines bold taco flavors with the heartiness of rice, black beans, and corn.

Ingredients

  • 1 pound ground chicken
  • 1 can black beans, drained and rinsed
  • 1 cup corn (frozen or canned)
  • 1 packet taco seasoning
  • 1 cup salsa
  • 2 cups cooked rice
  • 1 cup shredded cheese (cheddar or Mexican blend)
  • 1 tablespoon olive oil
  • Salt and pepper to taste
  • Optional Toppings: sour cream, avocado, chopped cilantro

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Heat olive oil over medium heat in a large skillet. Add the ground chicken and cook until browned.
  3. Stir in the taco seasoning, black beans, corn, salsa, and cooked rice until well combined.
  4. Transfer the mixture to a baking dish and top with shredded cheese.
  5. Bake for 20 minutes or until the cheese is melted and bubbly.
  6. Serve with your choice of toppings.

Notes

For a crispier top, broil for an additional two minutes after baking. Customize with additional vegetables or different cheeses as desired.
