Grilled Mango Lime Chicken

A vibrant grilled chicken dish infused with a refreshing mango-lime marinade, perfect for summer gatherings.

Ingredients

  • 4 boneless, skinless chicken breasts
  • 1 ripe mango
  • Zest of 1 lime
  • 1 tbsp lime juice
  • 2 tbsp olive oil
  • 1 tbsp coconut aminos
  • 1 tsp hot sauce
  • 1 tbsp maple syrup or honey
  • Pinch of salt
  • Pinch of black pepper

Instructions

  1. Place all marinade ingredients into a blender and blend on medium speed until smooth.
  2. Reserve 1/4 cup of the marinade in a glass container in the fridge for brushing the chicken after grilling.
  3. In a bowl, cover the chicken breasts with the remaining marinade and seal the bowl. Let the chicken marinate in the fridge for a minimum of 4 hours, up to 8 hours.
  4. Preheat the grill before the chicken finishes marinating.
  5. Remove the chicken from the marinade and place it on the preheated grill. Cook each side for about 10 minutes, flipping as necessary, until the chicken reaches an internal temperature of 165 degrees.
  6. Let the chicken rest on a cutting board or serving platter for about five minutes.
  7. Brush the reserved marinade on the chicken just before serving.

Notes

Choose a ripe mango for the best flavor. The longer you marinate the chicken, the richer the flavors will be. Adjust the hot sauce according to your spice preference.
