  • 2 cups broccoli florets
  • 2 tbsp olive oil

  • 1 tbsp lemon juice
  • 1 tbsp chopped fresh parsley
  • 1/4 tsp paprika

Instructions

  1. Marinate the chicken breasts with salt, black pepper, and 1 tbsp olive oil.
  2. Grill the chicken until fully cooked, reaching an internal temperature of 165°F. Once cooked, slice the chicken.
  3. Toss the broccoli florets with the remaining olive oil, salt, and pepper. Roast in an oven preheated to 400°F for 15-20 minutes until tender.
  4. In a bowl, mix Greek yogurt, minced garlic, lemon juice, parsley, and paprika to create the creamy sauce.
  5. Serve the sliced chicken and roasted broccoli over a bed of cooked rice or quinoa. Drizzle with the creamy sauce and garnish as desired.
