Green Chile Chicken Enchiladas

A comforting dish of tender chicken and creamy textures, wrapped in tortillas and topped with melted cheese.

Ingredients

  • 2 cups cooked shredded chicken
  • 8 oz cream cheese, softened
  • 1 can diced green chiles
  • 1 cup enchilada sauce
  • 1 cup shredded cheese (cheddar or Monterey Jack)
  • 8 corn or flour tortillas
  • Optional toppings: sour cream, green onions, cilantro

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a bowl, mix shredded chicken, cream cheese, diced green chiles, and half of the enchilada sauce until well combined.
  3. Spoon the mixture onto each tortilla, rolling them tightly and placing them seam-side down in a greased baking dish.
  4. Pour the remaining enchilada sauce over the top and sprinkle with shredded cheese.
  5. Bake in the preheated oven for 20-25 minutes until the cheese is melted and the filling is heated through.
  6. Serve warm with optional toppings.

Notes

Warm the tortillas slightly before filling to make them easier to roll without tearing. Consider adding cumin or garlic powder for extra flavor.
